A 16 year old is still a minor and therefore incapable of entering into a binding contract. Although most people don’t think in these terms the fact is that renting a hotel room is a form of contract. Some hotels might therefore hesitate to rent a room to a 16 year old. However, to the best of my knowledge it is not illegal to do so.

I suggest that you communicate with whatever hotel you’re interested in and determine what, if any, special arrangements they would require (such as having your parents guarantee payment).

You might also consider that an unaccompanied minor, at least in theory, requires the permission of a parent or legal guardian to be traveling. It might be a good idea to have a written and notarized document from one or both of your parents giving you specific permission to be traveling alone in France lest some busybody official hassle you.
